{"id":6321,"date":"2026-07-24T12:01:43","date_gmt":"2026-07-24T12:01:43","guid":{"rendered":"https:\/\/recipes.darcyparks.ca\/?p=6321"},"modified":"2026-07-24T12:01:43","modified_gmt":"2026-07-24T12:01:43","slug":"miras-favourite-blueberry-muffins","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=6321","title":{"rendered":"Mira\u2019s Favourite Blueberry Muffins"},"content":{"rendered":"\n<h3 class=\"wp-block-heading\">Cookie and Kate<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1  3\/4 cups whole wheat flour<\/li>\n\n\n\n<li>1 tsp baking powder<\/li>\n\n\n\n<li>1\/2 teaspoon baking soda<\/li>\n\n\n\n<li>1\/ 2teaspoon salt<\/li>\n\n\n\n<li>1\/4 teaspoon cinnamon<\/li>\n\n\n\n<li>1\/3 cup canola oil<\/li>\n\n\n\n<li>1\/2 cup of honey or maple syrup<\/li>\n\n\n\n<li>2 eggs<\/li>\n\n\n\n<li>1 cup plain Greek yogurt<\/li>\n\n\n\n<li>2 tsp. vanilla<\/li>\n\n\n\n<li>1 cup blueberries<\/li>\n\n\n\n<li>1 tbsp sugar for sprinkling on top of muffins (optional)<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">Instructions<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat the oven to 400 degrees Fahrenheit. If necessary, grease all 12 cups on your\u00a0muffin tinwith butter, coconut oil or cooking spray (my pan is non-stick and doesn\u2019t require any grease). Or, use muffin liners if you prefer.<\/li>\n\n\n\n<li>In a large mixing bowl, combine 1 \u00be cups of the flour with the baking powder, baking soda, salt and cinnamon. Mix them together with a whisk.<\/li>\n\n\n\n<li>In a medium mixing bowl, combine the oil and honey or\u00a0maple syrup\u00a0and beat together with a whisk. Add the eggs and beat well, then add the yogurt and vanilla. Mix well. (If the coconut oil solidifies in contact with cold ingredients, gently warm the mixture in the microwave for 30 seconds.<\/li>\n\n\n\n<li>Pour the wet ingredients into the dry and mix with a big spoon, just until combined (a few lumps are ok). In a small bowl, toss the blueberries with the remaining 1 teaspoon flour (this helps prevent the blueberries from sinking to the bottom). Gently fold the blueberries into the batter. The mixture will be thick, but don\u2019t worry.<\/li>\n\n\n\n<li>Divide the batter evenly between the 12 muffin cups (I used an ice cream scoop with a wire level, which worked perfectly). Sprinkle the tops of the muffins with\u00a0turbinado sugar. Bake the muffins for 16 to 19 minutes, or until the muffins are golden on top and a toothpick inserted into a muffin comes out clean.<\/li>\n\n\n\n<li>Place the\u00a0muffin tin\u00a0on a\u00a0cooling rack\u00a0to cool. You might need to run a butter knife along the outer edge of the muffins to loosen them from the pan. If you have leftover muffins, store them, covered, at room temperature for 2 days, or in the refrigerator for up to 5 days.
