{"id":6093,"date":"2020-08-16T14:47:26","date_gmt":"2020-08-16T14:47:26","guid":{"rendered":"https:\/\/recipes.darcyparks.ca\/?p=6093"},"modified":"2020-08-16T14:47:26","modified_gmt":"2020-08-16T14:47:26","slug":"bulgur-salad-with-cucumbers-red-peppers-chickpeas-lemon-and-dill","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=6093","title":{"rendered":"Bulgar Salad with Cucumbers, Red Peppers,Chickpeas, Lemon and Dill"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\"><strong>Serves<\/strong>: 4-6<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Source<\/strong>: Once Upon a Chef<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients<\/strong><\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup\u00a0bulgur or light bulgur<\/li>\n\n\n\n<li>1-1\/2 teaspoons\u00a0salt, divided<\/li>\n\n\n\n<li>1\/3 cup\u00a0diced red onion<\/li>\n\n\n\n<li>1\u00a0red bell pepper, diced\u00a0<\/li>\n\n\n\n<li>1\u00a0small English (or hothouse) cucumber, seeded and diced<\/li>\n\n\n\n<li>1\/2 cup\u00a0finely chopped fresh dill<\/li>\n\n\n\n<li>1\/3 cup\u00a0finely chopped fresh parsley<\/li>\n\n\n\n<li>1\u00a015-ounce can chickpeas, drained and rinsed<\/li>\n\n\n\n<li>1\/4 cup\u00a0fresh lemon juice, from 1-2 lemons<\/li>\n\n\n\n<li>1\/4 cup\u00a0extra virgin olive oil, best quality such as Lucini or Colavita<\/li>\n\n\n\n<li>1 large\u00a0garlic clove, finely minced<\/li>\n\n\n\n<li>1\/2 teaspoon\u00a0freshly ground black pepper<\/li>\n\n\n\n<li>1 teaspoon\u00a0cumin<\/li>\n\n\n\n<li>1 teaspoon\u00a0sugar<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Instructions<\/strong><\/h2>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Bring a kettle of water to a boil. Place the bulgur in a large bowl with 1\/2 teaspoon salt and 1-1\/4 cups boiling water. Cover the bowl tightly with saran wrap and let sit for 25-30 minutes, or until all of the water is absorbed.<\/li>\n\n\n\n<li>Meanwhile, to soften the bite of the raw onions, place them in a small bowl and cover with cold water. Let them sit for ten minutes, and then drain. (Feel free to skip this step if you don&#8217;t mind the taste of raw onions.) Combine the cooked bulgur with the red onions, remaining teaspoon of salt (I know it seems like a lot but the salad is bland without it) and all of the other ingredients. Season to taste with more salt, pepper, sugar or lemon if desired. Serve cold.<\/li>\n\n\n\n<li>In a large bowl, whisk together the oil, lemon juice, garlic, cumin, sugar, pepper, and remaining 1 teaspoon salt. Add the cooled bulgur, onion, bell pepper, cucumber, dill, parsley, and chick peas. Toss well, then taste and adjust seasoning if necessary. Chill until ready to serve or up to two days.
