{"id":5535,"date":"2015-05-11T14:26:02","date_gmt":"2015-05-11T18:26:02","guid":{"rendered":"http:\/\/recipes.darcyparks.ca\/?p=5535"},"modified":"2015-05-11T14:26:02","modified_gmt":"2015-05-11T18:26:02","slug":"aloo-matar-potatoes-and-peas","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=5535","title":{"rendered":"Aloo Matar (potatoes and peas)"},"content":{"rendered":"<p><strong>Serves: <\/strong>2\u20133 people<strong><br \/>\n<\/strong><\/p>\n<p><strong>Source:<\/strong> Adapted from <a title=\"Dhaba Style Aloo Matar\" href=\"http:\/\/www.7spice.net\/vegan-recipes\/dhaba-style-aloo-matar-recipe-vegan\/\" target=\"_blank\" rel=\"noopener noreferrer\">Seven Spice<\/a><strong><br \/>\n<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>For the gravy<\/p>\n<ul>\n<li>2 tsp oil<\/li>\n<li>1 tsp cumin seeds<\/li>\n<li>1 tsp ginger, freshly minced<\/li>\n<li>1 tbsp garlic, freshly minced<\/li>\n<li>1 medium onion, grated using big hole grater (or chopped finely)<\/li>\n<li>3 medium tomatoes, chopped finely or \u00bd can (use half of 400 gm can) with juice<\/li>\n<li>salt to taste<\/li>\n<li>1 tsp red chili powder<\/li>\n<\/ul>\n<p>For the curry<\/p>\n<ul>\n<li>2 tbsp oil<\/li>\n<li>1 tsp mustard seeds<\/li>\n<li>1 tsp cumin seeds<\/li>\n<li>3 medium potatoes, chopped in big bite size chunks<\/li>\n<li>\u00bd cup fresh or frozen peas<\/li>\n<li>4 tbsp spinach\u00a0or\u00a0kale, chopped<\/li>\n<li>1 tsp turmeric powder<\/li>\n<li>2 tsp red chili powder<\/li>\n<li>1 tsp coriander powder<\/li>\n<li>salt to taste<\/li>\n<li>water, as needed<\/li>\n<li>cilantro, finely chopped \u2013 for garnishing<\/li>\n<\/ul>\n<p><strong>Instructions<\/strong><\/p>\n<p>Gravy<\/p>\n<ol>\n<li>Heat oil in a pan and add cumin seeds.\u00a0Let it crackle for few seconds until golden brown. Add ginger, garlic and\u00a0and fry for few seconds until the raw smell goes away.\u00a0Add onion and some salt. Cook till light brown colour, about 2 minutes.<\/li>\n<li>Add\u00a0tomatoes and red chili powder.\u00a0Cook for few more minutes until all gravy combined and oil starts to leave the sides. Keep it aside.<\/li>\n<\/ol>\n<p>Curry<\/p>\n<ol>\n<li>Heat the oil another wide pan. Add mustard seeds, then\u00a0cumin seeds. Stir.\u00a0Add chopped potatoes. Salt to taste and add \u00bd cup water, then stir.<\/li>\n<li>Cover the lid and cook on slow-medium heat for 8\u201310 minutes.\u00a0The potatoes should be cooked till fork tender but still holding their shape. Add the chopped greens.
