{"id":5354,"date":"2012-07-31T15:15:57","date_gmt":"2012-07-31T19:15:57","guid":{"rendered":"http:\/\/recipes.darcyparks.ca\/?p=5354"},"modified":"2012-07-31T15:15:57","modified_gmt":"2012-07-31T19:15:57","slug":"gregs-dill-pickles","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=5354","title":{"rendered":"Greg&#8217;s Dill Pickles"},"content":{"rendered":"<p><strong>Serves: <\/strong><strong>4\u00a0 Litres to 47 Litres<br \/><\/strong><\/p>\n<p><strong>Source: <\/strong><strong>Greg<br \/><\/strong><\/p>\n<p><strong>Ingredients: (For Every 4 Pounds of Cucumbers)<br \/><\/strong><\/p>\n<ul>\n<li>4 pounds of small cucumbers<\/li>\n<li>Sprays of fresh dill (the spray is the flower portion on the stalk)<\/li>\n<li>garlic cloves, pealed<\/li>\n<li>6 cups of water<\/li>\n<li>2 cups of pickling vinegar<\/li>\n<li>1\/4 cup pickling salt<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Wash cucumbers and clean dill and peal garlic.<\/li>\n<li>20 minutes before processing, place jars in canner and add hot water and begin heating over medium heat.Keep jars hot until you are ready to fill them.<\/li>\n<li>In a large saucepan, combine water, vinegar and salt and heat until boiling.<\/li>\n<li>5 minutes before processing, place lids in hot water and keep lids hot until you are ready to use them.<\/li>\n<li>Place a spray of dill and garlic clove in each jar. Pack cucumbers into jars.<\/li>\n<li>Pour hot brine over cucumbers, leaving an 1\/8 inch headroom. Seal immediately and place jars in canner. Adjust water level to cover jars by 1 inch. Cover canner and bring to a boil over high heat.<\/li>\n<li>Once a full boil has been reached, begin counting processing time. For 1 litre jars, process for 15 minutes and for 1\/2 litre jars, process for 10 minutes.\u00a0 At the end of processing time, tun off heat and leave jars in canner for 5 minutes. Then carefully remove the jars and place on a heat safe surface.<\/li>\n<li>Do not move the jars for 12 to 24 hours.
