{"id":5295,"date":"2012-03-04T19:59:01","date_gmt":"2012-03-05T00:59:01","guid":{"rendered":"http:\/\/recipes.darcyparks.ca\/?p=5295"},"modified":"2012-03-04T19:59:01","modified_gmt":"2012-03-05T00:59:01","slug":"leek-parsnip-and-apple-soup","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=5295","title":{"rendered":"Leek, Parsnip and Apple Soup"},"content":{"rendered":"<p><strong>Serves: <\/strong><strong>Makes 7 cups<br \/>\n<\/strong><\/p>\n<p><strong>Source: Healthy Starts Here<\/strong><strong><br \/>\n<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>2 tablespoons virgin olive oil<\/li>\n<li>3 leeks (white and pale green parts thinly sliced)<\/li>\n<li>4 large scrubbed parsnips cut into 1 inch pieces (4 cups)<\/li>\n<li>2 Ida Red apples, scrubbed and cored and cut into 1 inch chunks<\/li>\n<li>1 teaspoon dried thyme<\/li>\n<li>1\/2 teaspoon dried coriander<\/li>\n<li>3 cups low sodium chicken or vegetable broth<\/li>\n<li>1 cup natural apple juice<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Heat a large saucepan, add oil, then leeks and saute for 5 minutes.<\/li>\n<li>Add the parsnips, apples, thyme and coriander and saute for 1 minute.<\/li>\n<li>Add broth and juice and bring to a boil. Reduce heat and cook covered until parsnips are tender (about 20 to 25 minutes).<\/li>\n<li>Using and immersion blender, puree the soup in the saucepan until smooth.
