{"id":239,"date":"2011-03-21T14:58:55","date_gmt":"2011-03-21T18:58:55","guid":{"rendered":"http:\/\/recipes2.darcyparks.ca\/2011\/03\/21\/quinoa-with-peppers-and-beans\/"},"modified":"2011-03-21T14:58:55","modified_gmt":"2011-03-21T18:58:55","slug":"quinoa-with-peppers-and-beans","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=239","title":{"rendered":"Quinoa with Peppers and Beans"},"content":{"rendered":"<p><strong>Serves:<\/strong> 4<br \/>\n<strong>Source:<\/strong><\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>1 cup quinoa<\/li>\n<li>2 1\/2 cups vegetable broth<\/li>\n<li>2 tablespoons extra-virgin olive oil<\/li>\n<li>3 cloves garlic, minced<\/li>\n<li>1 tablespoon finely chopped peeled fresh ginger<\/li>\n<li>3\/4 teaspoon whole cumin seeds<\/li>\n<li>2 medium red bell peppers, cut into thin strips<\/li>\n<li>1 large onion, cut into thin wedges<\/li>\n<li>1 can (14-19 ounces) black beans, rinsed and drained<\/li>\n<li>1\/4 cup chopped fresh cilantro<\/li>\n<\/ul>\n<h2>Instructions:<\/h2>\n<ol>\n<li>Place the quinoa in a fine-mesh strainer and rinse under cold running water until the water runs clear.<\/li>\n<li>Bring 2 cups of the broth to a boil in a medium saucepan over high heat. Add the quinoa and return to a boil. Reduce the heat to low, cover, and simmer for 20 minutes, or until tender.<\/li>\n<li>Meanwhile, heat the oil in a large nonstick skillet over medium heat. Add the garlic, ginger, and cumin seeds and cook, stirring, for 2 minutes, or until fragrant. Add the bell peppers and onion and cook, stirring, for 8 minutes, or until tender. Stir in the beans and the remaining 1\/2 cup broth and cook for 2 minutes.<\/li>\n<li>Fluff the quinoa with a fork and stir in the cilantro.
