{"id":219,"date":"2010-03-04T21:06:24","date_gmt":"2010-03-05T02:06:24","guid":{"rendered":"http:\/\/recipes2.darcyparks.ca\/2010\/03\/04\/fast-nut-burgers\/"},"modified":"2010-03-04T21:06:24","modified_gmt":"2010-03-05T02:06:24","slug":"fast-nut-burgers","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=219","title":{"rendered":"Fast Nut Burgers"},"content":{"rendered":"<p><strong>Serves:<\/strong> 4 to 6 burgers<br \/>\n<strong>Source:<\/strong> Mark Bittman&#8217;s How to Cook Everything Vegetarian<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>1 medium onion<\/li>\n<li>1 cup walnuts, pecans, almonds, cashews, or other nuts, preferably raw<\/li>\n<li>1 cup (raw) rolled oats or cooked short-grain white or brown rice<\/li>\n<li>2 tablespoons ketchup, miso, tomato paste, nut butter, or tahini<\/li>\n<li>1 teaspoon chili powder or any spice mix you like<\/li>\n<li>salt and freshly ground pepper<\/li>\n<li>1 egg<\/li>\n<li>2 tablespoon peanut oil, extra virgin olive oil, or neutral oil, like grapeseed or corn<\/li>\n<\/ul>\n<h2>Instructions:<\/h2>\n<ol>\n<li>Grind the onion in a food processor. Add the nuts and oats and pulse to chop, but not too finely. Add the ketchup, spice mix, salt, pepper and egg. Process briefly; don&#8217;t grind the mixture too finely. Add a little liquid\u2014water, stock, soy sauce, wine, whatever is handy\u2014if necessary; you want a mixture that is moist but not loose.<\/li>\n<li>Let the mixture rest for a few minutes if you have time, then shape into 4 to 6 patties. Put the oil in a large nonstick or well-seasoned cast-iron skillet over medium heat. When the oil is hot, add the burgers to the skillet. Cook for about 5 minutes, more or less undisturbed, then turn.
