{"id":190,"date":"2008-01-31T15:55:27","date_gmt":"2008-01-31T20:55:27","guid":{"rendered":"http:\/\/recipes2.darcyparks.ca\/2008\/01\/31\/blueberry-oatmeal-squares\/"},"modified":"2008-01-31T15:55:27","modified_gmt":"2008-01-31T20:55:27","slug":"blueberry-oatmeal-squares","status":"publish","type":"post","link":"https:\/\/recipes.darcyparks.ca\/?p=190","title":{"rendered":"Blueberry Oatmeal Squares"},"content":{"rendered":"<p><strong>Serves:<\/strong> 24 Squares<br \/>\n<strong>Source:<\/strong> Canadian Living Magazine &#8211; August 2007<\/p>\n<h2>Ingredients:<\/h2>\n<ul>\n<li>2 1\/2 cups rolled oats<\/li>\n<li>1 1\/4 cups all purpose flour<\/li>\n<li>1 cup packed brown sugar<\/li>\n<li>1 tablespoon grated orange rind<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>1 cup cold butter or margarine<\/li>\n<\/ul>\n<p><strong>Filling<\/strong><br \/>\n&#8211; 3 cups fresh blueberries<br \/>\n&#8211; 1\/2 cup white sugar<br \/>\n&#8211; 1\/3 cup orange juice<br \/>\n&#8211; 4 teaspoons of cornstarch<\/p>\n<h2>Instructions:<\/h2>\n<ol>\n<li>In saucepan, bring blueberries, sugar and orange juice to boil; reduce heat and simmer until tender, about 10 minutes. Whisk cornstarch with 2 tbsp (25 mL) water; whisk into blueberries and boil, stirring, until thickened, about 1 minute. Place plastic wrap directly on surface; refrigerate until cooled, about 1 hour.<\/li>\n<li>In large bowl, whisk together oats, flour, sugar, orange rind and salt with pastry blender, cut in butter until in coarse crumbs. Press half into 8-inch (2 L) square parchment paper\u2013lined metal cake pan; spread with blueberry filling. Sprinkle with remaining oat mixture, pressing lightly.<\/li>\n<li>Bake in centre of 350\u00b0F (180\u00b0C) oven until light golden, about 45 minutes. Let cool on rack before cutting into squares.
