Citrus salad

Ingredients

  • A mix of citrus fruits of choice: oranges, clementines, grapefruit, blood orange, pomelo, lime, etc . 2-4 per person depending on size.
  • Mint leaves (as much as preferred).
  • Maple syrup or honey (to taste).
  • Pistachios, roughly chopped.

Instructions

  1. Peel and slice the citrus fruit (or cut out the filets).
  2. Arrange on a plate.
  3. Add mint leaves, chopped pistachios and a drizzle of maple syrup or honey.

Lemon and olive oil cookies

Serves: 10-15 cookies

Ingredients

  • 1 dl sugar
  • 1 lemon, juice + zest
  • 1/3 cup olive oil (3/4 dl)
  • a pinch of salt
  • 1/2 tsp baking powder
  • 1 1/4 cup flour (3 dl)

Instructions

  1. Stir together lemon juice, zest and olive oil.
  2. Stir in the dry ingredients. Form a dough, add some water or more flour if necessary.
  3. Let sit for 30 minutes.
  4. Form 10-15 biscuits.
  5. Bake for 10-12 minutes, 375 F (190 C) until lightly browned.

Nut burgers

Serves: 5-6 large burgers

Ingredients:

  • 1 yellow onion, chopped
  • 200g seeds/nuts (e.g. sunflower seeds, almonds) (1 1/3 cups)
  • 200g carrots ( 2 cups)
  • 2 dl cooked brown/red/black rice (3/4 cup + 1 tablespoon)
  • 200g cooked beans (e.g. black beans, kidney beans) (1 cup)
  • 3 tbsp ketchup or chili sauce
  • 4 tbsp flour
  • olive oil
  • water if needed
  • salt, soy sauce

Instructions:

  1. Roast the nuts/seeds
  2. Mix the nuts/seeds in a food processor
  3. Fry the onion
  4. Mix beans in a food processor
  5. Mix everything together, add water if needed
  6. Shape burgers (approx 150g for larger burgers and approx 80g for smaller burgers)
  7. Cook in oven, 190 degrees (C) for about 30 minutes

Gingerbread and sesame truffles

Makes: 12 balls

Ingredients:

  • 14 soft dates (approx 150 grams)
  • 60 grams walnuts or sunflower seeds
  • 1 tbs tahini
  • 1 tbs coconut oil
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cardamom
  • 1/4 tsp allspice
  • 1/4 tsp cloves
  • 1/4 tsp sea salt
  • 4 tbs sesame seeds, to roll the truffles in

Instructions:

  1. Mix all the ingredients (apart from the sesame seeds) in a food processor.
  2. Roll the mixture into balls and roll them in sesame seeds.
  3. Refrigerate until firm. Eat within a week (if not frozen).

Moroccan bircher

Ingredients

Bircher:

  • 3 dl (1 1/4 cups) rolled oats
  • 2 tbsp raisins
  • a pinch of salt
  • 1/2 tsp cinnamon
  • 2 dl (3/4 cups) orange juice
  • 2 dl (3/4 cups) milk of choice

Toppings:

  • 1 orange, peeled
  • 1/2 pomegranate
  • 1/2 dl (1/4 cups) salty almonds, chopped
  • 1 tbs tahini
  • 1 tsp honey
  • a pinch of cinnamon

Instructions:

  1. Mix the bircher ingredients in a large bowl. Refrigerate overnight.
  2. In the morning, divide the bircher in two bowls and top with slices of orange, pomegranate seeds, salted almonds, tahini, honey and cinnamon.
