Ingredients:
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1/2 tablespoon olive oil
- 1 – 28 ounce/796 ml can diced tomatoes
- 1 10 ounce/284 ml can beef broth
- 1 can water
- 1 – 19 ounce/540 ml can white kidney beans
- 1/2 cup baby shell pasta or macaroni
- 1/2 teaspoon each oregano, basil, and thyme
Instructions:
- In a heavy saucepan,sauté onion and garlic in olive oil for 2 minutes.
- Add tomatoes, broth, water, kidney beans, oregano, thyme, and basil.
- Bring to a boil. Stir in pasta and simmer uncovered for about 10 minutes or until pasta is cooked. Serve immediately in bowls. Top with fresh Parmesan cheese and chopped parsley.
