Ingredients:
- 1 1/3 cups all purpose flour
- 1 cup white sugar
- 1/3 cup brown sugar, packed
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup non-hydrogenated margarine
- 3 large egg whites, beaten
- 1 teaspoon vanilla extract
- 4 tablespoons icing sugar
Instructions:
- Preheat oven to 350 degrees.
- Combine flour, white sugar, brown sugar, baking powder and salt. Stir in margarine until mixture is well combined and crumbly. Add egg whites and vanilla. Stir by hand until dough comes together.
- Place a few heaping tablespoonfuls of icing sugar into a shallow dish. Roll dough into 1 1/2 inch balls. Roll the balls in icing sugar to coat.
- Place 2 inches apart on a baking sheet coated in cooking spray or on parchment. Bake for 12 to 14 minutes, until just set around the edges but still soft in the middle. Transfer to a rack to cool.
