Ingredients:
- 3 cups dates, chopped
- 1 1/2 cups water
- 1 tablespoon lemon juice
- 1/2 cup canola margarine
- 3/4 cup brown sugar
- 3 tablespoons white sugar
- 1 cup flour
- 1/4 teaspoon baking soda
- 1 cup rolled oats
Instructions:
- Combine dates, water, and lemon juice in a saucepan. Bring to a boil stirring often. Reduce heat, and simmer gently for about 10 minutes or until thickened. Cool.
- Cream margarine, brown sugar, and white sugar. Combine flour, oats, and baking soda. Stir flour mixture into sugar mixture until crumbly.
- Pat 2/3 of the crumb mixture into the bottom of a 9 by 13 baking dish. Spread dates over the base. Sprinkle remaining crumbs over dates and bake at 350 degrees for 20 to 25 minutes.
