Ingredients:
- 36 vanilla wafers
- 3 – 8 ounce packages cream cheese
- 2/3 cup white sugar
- 4 eggs
- 2 tsp. lemon juice
- 1 can pie filling, cherry, blueberry, or raspberry
Instructions:
- Preheat oven to 350 degrees. Line muffin tins with baking cups. Place one vanilla wafer in the bottom of each baking cup.
- Mix sugar, cream cheese, eggs, and lemon juice until smooth. Spoon cream cheese mixture over wafers to fill cups to 2/3 full. Bake in a preheated oven for 18 to 20 minutes. Cool. Cupcakes will sink in the middle while cooling. Spoon pie filling over each cupcake and refrigerate at least one hour before serving.
