Swedish Pea Soup (vegetarian, onion-free, Instant Pot version)

Ingredients

  • 500 g whole yellow peas
  • 1 litre water (plus more for soaking)
  • 1 bouillon cube
  • 2 tsp thyme

Instructions

  1. Soak peas in lots of water for 12 hours. Pour off the water.
  2. Add peas and water to the Instant Pot.
  3. Add bouillon cube and thyme without stirring.
  4. Pressure cook on high for 45 minutes.
  5. Stir and serve.
