Marinated Chickpeas

Serves: 1 1/2 cups

Ingredients

  • 1 1/2 cups cooked chickpeas, drained and rinsed
  • 1/2 tablespoon of olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 clove garlic, minced
  • 1/4 teaspoon Dijon mustard
  • 1/2 teaspoon sea salt
  • 2 tablespoons of chopped fresh herbs

Instructions

  1. Combine the ingredients in a medium bowl.
  2. Chill until serving time.
