Ingredients
- 1 cup of creamy, unsweetened, unsalted almond butter or sunflower seed butter
- 1/3 cup maple syrup or honey
- 1/4 cup cocoa powder
- 1/4 teaspoon sea salt
- 1 teaspoon instant coffee powder (optional)
- 1 large egg
- 1 teaspoon vanilla
- 1 teaspoon baking soda
- 1 1/2 cups shredded zucchini (about 2 small)
- 1 cup of dark or semi sweet chocolate chips
- 1/2 cup chopped walnuts or pecans
Instructions
- Grease 8 inch baking pan and preheat oven to 350 degrees.
- In a large bowl, combine almond butter, maple syrup, cocoa powder, salt, coffee powder, egg, vanilla, and baking soda until smooth.
- Stir in zucchini, chocolate chips, and nuts.
- Pour into prepared pan and bake until just set and a toothpick inserted into the centre comes out clean or with dry crumbs. An 8 inch pan takes about 35 minutes. Remove from oven and cool before serving.
