Ingredients:
- 3 large bananas (about 1 1/3 cups mashed)
- 2 tablespoons ground flaxseed
- 1/3 cup plant based milk
- 1/3 cup melted coconut oil or canola oil
- 2 tablespoons maple syrup
- 2 teaspoons vanilla
- 1/4 cup plus 2 tablespoons of coconut or cane sugar
- 1/2 cup oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups of light spelt flour or whole grain spelt flour
- 1/2 cup chopped walnuts
Instructions:
- Preheat oven to 350 degrees and prepare a 9 x 5 loaf pan .
- In a large bowl, mash bananas until almost smooth. Stir in wet ingredients until combined.
- Stir in dry ingredients and add walnuts
- Spoon dough into prepared loaf pan and bake for 45 to 55 minutes. The top of the loaf should spring back when touched. Slice when cooled.
