Ingredients:
- 2 lbs boneless chicken breast, cut in cubes
- 3 Tbsp flour
- 1 Tbsp curry powder
- 4 Tbsp vegetable oil
- 1 Tsp salt
Sauce
- 2 Medium onions, chopped
- 2 Tbsp butter
- 2 cups apricot baby food
- 1/2 Tsp salt
- 2 Tbsp curry powder
- 8 Tsp vinegar
- 4 Tbsp honey
Instructions:
- Mix dry ingredients with chicken in a Ziploc bag and shake to coat the chicken
- Brown the chickem in the oil
- Place in a large covered casserole dish
- Combine sauce ingredients in a small saucepan and bring to a boil. Simmer for 5 minutes
- Pour over the chicken in the casserole
- Bake covered @ 350 degrees for 30 minutes
Serving suggestions:
Serve alongside rice and green beans or broccoli and naan bread.
