Mustard Corn Relish

Serves: 2 – 3 Pints (Recipe can be doubled)

Ingredients:

  • 3 cups corn
  • 1 cup onion
  • 1 cup celery
  • ½ cup chopped green pepper
  • ¼ cup chopped sweet red pepper
  • 2 tsps salt
  • 2 tablespoons flour
  • 1 tablespoon mustard
  • ½ tsp turmeric
  • 2 cups white vinegar
  • 1 cup granulated sugar
  • 1 tsp celery seed

Instructions:

  1. Combine all ingredients: simmer uncovered about 30 minutes until thickened.
  2.  Pack into hot sterilized jars and seal.
