Ingredients:
- 2 cups of large flake oats
- 1 cup coconut
- 1/3 cup canola oil
- 1/4 cup maple syrup plus 1 tablespoon
- pinch of salt
- 1 cup chopped walnuts
- 1 cup dried cherries
- 1/2 cup chopped dried apricots
Instructions:
- Preheat oven to 350°, and line baking sheet with foil or parchment.
- In a large bowl, combine oats, coconut, walnuts, salt, canola oil, and 1/4 cup of maple syrup.
- Spread mixture onto prepared baking sheet and drizzle with 1 tablespoon of maple syrup.
- Bake for 35 to 40 minutes, stirring occasionally.
- Remove from oven and mix in dried fruit.
