Ingredients:
- 1/2 cup (125 mL) unsalted butter, at room
temperature - 3/4cup (‘175m L) granulated sugar
- 1/4 cup (60 mL) packed dark brown sugar
- 2 large eggs
- 1 tbsp (15 mL) vanilla extract
- 2 cups (500 mL)
- all purpose flour
- 1/2Cup( 125 mL) cocoa
- 1 1/2tsp(7mL)baking powder
-1 tsp (5 mL) ginger
-1/2 tsp (2 mL) each ground cardamom,
cinnamon and salt -
I cup (250 mL) slivered Almonds
Instructions:
- Preheat oven to 325° and line a
baking sheet with parchment paper. With an
electric mixer,beat butter with sugar until smooth.
and fluffy Add eggs and vanilla and beat until smooth. - Sift together our,cocoa,baking powder,
spices and salt. Stir flour mixture into butter
mixture until blended. Stir in almonds almonds. Shape
cookie dough into 2 logs and place on baking sheet covered in parchment. Bake for 20 to 30 minutes. - Remove cookies from oven, let cool for 10 minutes and then slice on a bias into 1/2 inch slices.
- Place on a baking sheet and bake an additional 12 to 15 minutes until lightly browned around edges.
