Ingredients:
- 2 cups of all purpose flour
- 1 cup brown sugar
- 1 tablespoon of baking powder
- 2 teaspoons of cinnamon
- 1/2 teaspoon of nutmeg
- 1/4 teaspoon of cloves
- 1/4 teaspoon of ginger
- 1/4 teaspoon of baking soda
- 1 – 15 ounce can of pumpkin
- 1/2 cup of skim milk
- 2 egg whites
- 1/3 cup of low fat yogurt
Instructions:
- Preheat oven to 350 degrees. Prepare pan with cooking spray and set aside.
- Combine flour, brown sugar, baking powder, baking soda, and spices in a large bowl.
- In a medium bowl, combine pumpkin, skim milk, yogurt, and egg whites. Spoon pumpkin mixture into flour mixture and mix until just moistened. Pour batter into prepared pan and bake for 60 minutes.
