Ingredients:
- 2 cups quick cooking oats
- 2 cups buttermilk or sour milk
- 2 eggs
- 1 1/2 cups brown sugar
- 1/2 cup canola oil
- 2 cups all purpose flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. salt
- 1 cup chocolate chips
Instructions:
- Combine buttermilk and oats and let set for 10 minutes. Add eggs, canola oil, and brown sugar.
- Stir together flour, baking soda, baking powder, and salt.
- Gently fold in dry ingredients into the wet ingredients.
- Stir in chocolate chips.
- Spoon batter into greased muffin tins or tins lined with paper baking cups.
- Bake at 400° for 15 to 20 minutes or until lightly browned. Remove from tins and cool on a baking rack.
