Ingredients:
- 2 cups pastry flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup sugar
- 1/2 cup orange juice
- 1/2 cup apple sauce, unsweetened
- 1/4 cup liquid egg substitute
- 3 tablespoons canola oil
- 1 1/2 cups fresh cranberries, chopped
Instructions:
- Preheat oven to 350 degrees. Coat a 9 x 5 inch pan with cooking spray.
- In a large bowl, combine flour, baking powder, baking soda, and salt. In another bowl, beat together sugar, egg substitute, orange juice, apple sauce, and canola oil.
- Gently stir flour mixture into the liquid mixture. Fold in cranberries and transfer to baking pan.
- Bake at 350 degrees for 50 minutes or until wooden pick inserted into centre comes out clean. Cool pan on a wire rack for ten minutes before removing from pan.
