Ingredients:
- 3 bananas
- 3/4 cups white sugar
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups all purpose flour
- 1/3 cup of canola oil or melted margarine
Instructions:
- Preheat oven to 375 degrees.
- Mash bananas. Add sugar and slightly beaten egg to bananas.
- Blend in sugar until it dissolves. Add canola oil.
- Combine dry ingredients and blend with banana mixture until the texture is fairly smooth.
- Spoon into prepared muffin tins and bake for 18 to 20 minutes or until golden brown.
